2009 Wish List

Each year, I make a list of foods, ingredients, techniques, and regions that I want to focus on for the coming year. It's my way of pushing myself to continually grow as a chef. Because I have no time to get out and sample other cuisines, I have to bring the ingredients into my kitchen to absorb them into my repertoire.

  1. Oooh, Moose and Antelope, can't wait! Actually, it all sounds great!

    Will the upcoming Game Meal include one/both of those? Any ideas year what else will be on the Game Meal menu? Anything with wings or that hops around with big ears? Maybe an option for avoiding flying hoppy things? You said you No Vegetarians, but didn't say No Lisas. :-)

  2. Moose and antelope are hit or miss on the game market. Only time will tell if I will be able to get one or both of them.

    "Exotics" that I always have access to include quail, partridge, pheasant, squab, various ducks, goose, ostrich, elk, venison, bison, yak, rabbit, alligator, and kangaroo.

    I said no vegetarians because every year at our game dinner, a vegetarian tries to book. Why, if you don't eat meat, would you try to come to a dinner featuring......meat? I love our vegetarian customers, but sometimes the logic escapes me.

    Speaking of defying logic, as for Lisa's diet, I still don't have a grasp on what she will and won't eat. That is, her list seems to be algorithmically challenged.

    I first saw the Omnivore's Hundred on your blog, I believe. As I recall there were a couple of things on there that I hadn't tasted such as Fugu and Poutine, for lack of opportunity. Of course, I could just go in the kitchen and make my own Poutine any old time, but being lactose intolerant, why would I?
